DESCRIPTION — Ethyl 2-Methyl Butyrate (also called Ethyl 2-Methylbutanoate or Ethyl α-Methylbutyrate, CAS 7452-79-1) is a fruity ester valued in perfumery and flavour work for its bright, sparkling green-apple top note. It occurs naturally in apples, pineapples, plums, and strawberries, and is produced synthetically by esterifying 2-methylbutyric acid with ethanol — giving formulators a consistent, cost-effective alternative to natural extraction.
Fragrance & Flavour Profile
A powerful, diffusive top note with green-apple, pineapple-skin, and unripe-plum facets, rounded out by pineapple and peach nuances underneath. In flavour applications it reads fruity, green, berry, strawberry, and fresh-apple — making it equally useful to perfumers and flavourists working on fruity-floral or tropical-fruit profiles.
Appearance & Handling
Colourless to pale yellow, oily liquid with a characteristic fruity odour. Insoluble in water and lighter than water. Flash point ~73°F (~23°C) — highly flammable, so store in a cool place away from heat and open flame, in a tightly closed container.

- Top-note modifier in fruity-floral fine fragrance, soaps, shampoos, body wash, and lotions
- Flavouring agent in beverages, confectionery, and bakery products for apple, pineapple, and tropical-fruit notes
